BAKED GARLIC SPARE RIBS DRESSED WITH REFRESHING SRIRACHA MAYO

Serves 4
1. Blend all the marinating ingredients together until smooth. Marinate the ribs for an hour or ideally overnight in the fridge.
2. Mix all the dressing ingredients together and set aside.
3. Bake the ribs in the pre-heated oven at 200℃ for 20 minutes. Flip them and cook for further 10 minutes or until cooked thoroughly.
4. Take out the ribs and evenly coat them with the dressing before serving.

500g pork spare ribs, full rack, roughly 10 strips
Marinating:
4 big garlic cloves
1 handful coriander leaves
3 Tbsp Lee Kum Kee Gluten Free Oyster Sauce
2 Tbsp water
2 tsp sugar
Dressing:
3 Tbsp Lee Kum Kee Srirach Mayo
3 Tbsp chopped pickled cucumber
2 Tbsp finely chopped red onion
1 Tbsp finely chopped coriander (optional)
