CHICKEN OMELET WITH OYSTER SAUCE

Serves 4
1. Mix chicken with marinade.
2. Stir-fry chicken in 1 tbsp oil until done. Add yellow chives and stir well. Set aside.
3. Beat eggs with seasoning mix.
4. Heat 2 tbsp oil. Add beaten eggs. Lower the heat and pan-fry one side to form an egg sheet. Place chicken in the centre. Fold the omelet in half to cover chicken. Pan-fry omelet until just cooked. Serve hot.
