Serves 2-3
1. Marinate sliced chicken fillets with Hoisin Sauce for 10 minutes.
2. Pan-fry chicken with 1 Tbsp oil in low heat for 5 minutes or until cooked.
3. Pan fry one tortillas in medium heat in a frying pan with 1 Tbsp of olive oil, arrange sweetcorn, chicken and rocket salad on top of tortillas and sprinkle cheese on top.
4. Spread the chosen sauce on one side of the second tortillas before placing the sauce side down on the first tortillas.
5. Flip the tortillas sandwich over to the other side down, pan fry until golden brown.
6. Take out quesadillas, cut into quarters before serving.
7. Repeat steps 3 and 6 for the remaining ingredients.


150g chicken fillets, cut into strips
30g rocket salad
4 tortillas
4 spring onions, thickly sliced
2 Tbsp canned sweetcorn
4 Tbsp grated cheddar cheese, mild or sharp cheddar
2 Tbsp olive oil
1 Tbsp vegetable oil
1 Tbsp Lee Kum Kee Hoisin Sauce
