CUCUMBER SALAD IN SICHUAN VINAIGRETTE

Serves 4
1.Blend the sauce mix together with the finely chopped shallot, garlic and dill. Set aside.
2.Brush the sauce mix on one side of the smoked salmon slices then wrap around the cucumber sticks to form rolls. Repeat and cut into bite-size. Serve with sliced cucumber and additional sauce for dressing.

20g shallot and garlic, finely chopped
5g dill, finely chopped
Sauce Mix:
2 Tbsp balsamic vinegar
2 Tbsp Lee Kum Kee Chiu Chow Chilli Oil
2 Tbsp Lee Kum Kee Pure Sesame Oil
2 Tbsp lee Kum Kee Double Deluxe Soy Sauce
1 Tbsp sugar
