GLASS NOODLE SALAD

Serves 2
1 Cook the dry glass noodles in boiling water for 8 minutes or according to packet instructions.
2 Let the noodles cool down and mix well with the dressing. Serve immediately.

3 Tbsp olive oil
1 Tbsp Pure Sesame Oil
4 Tbsp fresh lime juice
2 Tbsp brown sugar
1 Tbsp ginger, finely chopped
½ clove garlic, finely chopped
1 handful fresh coriander and basil, chopped
