Prawn Salad with Chilli Dressing

Serves 2 as main course or serves 4 as starter
1. Mix prawns, papaya and dressing in a bowl. Cover and refrigerate for 1 hour.
2. Sprinkle with coriander and chopped fried peanuts. Serve cold.

Cantaloupe melon is an alternative to papaya.


250 g cooked king prawns
1/3 cucumber, cut into half-moon shape
1 papaya, cut into small slivers
Coriander for garnish
Peanuts, chopped and fried for garnish
1 ½ tbsp Lee Kum Kee Sweet Chilli Sauce (or 1tsp Chilli Garlic Sauce)
3 tbsp lime Juice
2 tbsp sugar
1 tbsp fish sauce
1 stem lemon grass, finely chopped
