Roasted Turkey with Apple and Cranberries Stuffing

Serves 16-24
1) Rub turkey in and out with marinade. Place turkey in a plastic bag with breast side down and marinate for at least 8 hours or overnight. Place in refrigerator.
2) Melt butter to sauté onion and celery until fragrant. Add cranberries, apple, bread and seasoning mix to make the stuffing.
3) Spoon stuffing into turkey neck cavity and tie.
4) Cover the turkey with bacon and bake turkey at 425F/220C preheated oven for 10 minutes. Then remove the bacon and lower temperature to 350F/180C, bake for 2 1/2 hours [1 hour baking time for every 5 lb of turkey] or until cooked, basting marinade over turkey every 30 minutes. Before turkey is done, brush with glazing and honey over turkey for a good brown color.
5) When turkey is done, remove from oven, untie and let cool for 10 minutes. Slice and serve with dripping and stuffing.

Remarks: Turkey should be marinated overnight.

Ground black pepper 1 tbsp
Lemon rind 1 pcs
Double Deluxe Soy Sauce 2 tbsp
Mixed herbs 2 tsp
Sugar 2 tbsp
