STEAM TOFU WITH MINCED CHICKEN & MUSHROOMS

Serves 2
1. Cut the block of tofu into eight square portions.
2. Mix the chicken, mushrooms and marinade together then divide between the portions of tofu. Line a two-tiered steamer with greaseproof paper and transfer the portions of tofu into the steaming baskets. Steam over a high heat for 10 minutes or until the chicken is cooked.
3. Lift onto serving plates and garnish with spring onions. Drizzle with soy sauce before serving.

350g block beancurd (tofu)
90g minced chicken
50g button mushrooms and shiitake mushrooms, sliced or halved
2 spring onions, trimmed and shredded (for garnish)
Marinade:
1 tbsp Lee Kum Kee Premium Light Soy Sauce 
½ tsp Lee Kum Kee Pure Sesame Oil 
½ tsp sugar
2 tsps cornflour
Seasoning Sauce:
2 tbsps Lee Kum Kee Premium Light Soy Sauce
