Sweet & Sour Pork

Serves 2 as main course or serves 4 as starter
1. Whisk together the batter mix until smooth and set aside for 15 minutes before adding the vegetable oil.
2. Dip the pork in batter before deep frying in hot oil until the batter is golden and crisp. Drain and set aside.
3. Stir fry the pepper and pineapple for 2 minutes. Add Lee Kum Kee Sauce for Sweet & Sour Pork, 1 tbsp pineapple juice and cooked pork until heated through. Serve immediately.



150 g pork fillet, cut into bite-size pieces
½ medium red pepper, diced
2 rings canned pineapple, chopped
Vegetable oil for deep frying, batter and stir frying
1 tbsp pineapple juice
80 g Lee Kum Kee Sauce for Sweet & Sour Pork (1 pack)
Batter Mix:
30 g self raising flour
1 tsp cornflour
45 ml cold water
1 ½ tsp vegetable oil
